Ancel Keys : The Test of Time

This is the reason I eat a high fat diet today. The more you research the more you will see the name Ancel Keys come up. Ancel Keys was the driving force behind the low fat high carbohydrate diet.
By ignoring data from 16 countries, Keys was able to argue that fat caused heart disease. But association or correlation is not causation! As an example, the U.S. had a relatively high fat diet and high rates of heart disease. The Japanese had a very low fat diet and low rates of heart disease. But, after the war, the Japanese also had very low calorie diets, low consumption of sugar and refined food, and a much higher rate of deadly strokes - associations Keys ignored. "Low fat" began on television in 1956 when American Heart Association doctors conducting a fundraiser told a national TV audience to replace traditional American foods - eggs, butter and red meat - with boxed cereal, margarine, vegetable shorting, polyunsaturated corn oil and skinless chicken. Five years later, AHA board member Ancel Keys was famous. He had made the cover of Time (January 13, 1961), and at his urging, the American Heart Association officially adopted his "low fat" high carbohydrate diet. Fellow board member and University of Chicago professor Jeremiah Stamler was a Staunch Keys backer.

The curtain is falling on "low fat," says Taubes, and what we have now is the test of time.
